シェードツリーが育む高熟度のチェリー
ラスヌベス農園では、収穫期間中の中でもっとも熟度が高まるタイミングのチェリーのみを使用し、その中でもしっかりと精選加工ができたロットを厳選しています。そのためか、今までにエルサルバドルでは味わったことのないほどフローラルで、ジューシーな味わいの水洗式コーヒーとなっています。この農園では主に、ブルボン種とティピカ種が育てられており、試験的に、パーカスやハイブリッド系の品種が植えられています。インガと呼ばれるシェードツリーを使用し、日照量を調整するために定期的にシェードツリーの剪定を行なっています。水洗いの後の乾燥では、天日乾燥のほか日陰でゆっくりと乾燥させる工程を挟むことによって、コーヒーにストレスを与えずに良質な味わいを作り出すことができました。

Highly ripe cherries grown by shade trees
At Las Nubes Farm, they only use cherries that are at their ripeest during the harvest season, and carefully select the batches that have been thoroughly processed. Perhaps as a result, they produce a washed coffee with a floral and juicy flavor never before tasted in El Salvador. This farm mainly grows Bourbon and Typica varieties, and experimentally plants Percus and hybrid varieties. They use shade trees called Ingas, which are regularly pruned to adjust the amount of sunlight. After washing, the coffee is dried in the sun as well as slowly in the shade, which allows them to produce a high-quality flavor without stressing the coffee.

ラスヌベス農園はエル・ボルボロン社の栽培指導員と、できるだけ有機堆肥を使用する栽培方法を一緒に考えながら、良質なコーヒーづくりに取り組まれています。エルサルバドルは元々栽培技術は高いですが、その中でもエルブルボン社が雇っている栽培指導員はとても優秀だそうです。
同社はコーヒー栽培に関しては創業前から取り組んでおり、100年以上の歴史があるエル・ボルボロン社のドライミルでは、徹底的な品質管理が行われています。
周辺の良質なコーヒーを生産する農園とパートナーを組み、原料の選定だけでなく、苗木の生産から着手し、品質の高い苗木を各農園に提供しています。

Las Nubes Farm is one of the partner farms of El Borbolón, which has a history of over 100 years. Las Nubes Farm works with El Bourbon's cultivation instructors to produce high-quality coffee, working together to come up with cultivation methods that use organic compost as much as possible. El Salvador has always had high cultivation techniques, but the cultivation instructors employed by El Bourbon are said to be particularly skilled.
The company has been involved in coffee cultivation since before it was founded, and El Bourbon's dry mill, which has a history of over 100 years, carries out thorough quality control.
