ポパヤンは歴史的な建築がよく残り、ヨーロッパの雰囲気が漂う都市である。
家の壁は白で統一されており「白い町」と呼ばれている。高原に位置しているが比較的雨が多く、年間雨量は2000mmを上回る。
コロンビア・ポパヤンは山岳地帯が多く、日照・降水量・標高・土壌といったコーヒー栽培の好条件の揃った特産地です。

〜ABOUT FARMER〜
サントゥアリオ農園はポパヤン高原に位置し、南東にはプラケ火山(標高4,646m)を望みます。
農園主カミーロ・メリサルデ氏は、古き良き時代のコロンビアマイルドコーヒーの復活を目指し、なおかつ完全にサスティナブルな条件のもと、一から農園を設計し1999年に農園作りをスタートさせました。
サントゥアリオ農園では当初からスペシャルティコーヒー、すなわち「至高のコロンビアマイルド」を目指し、苗木の播種から収穫、精選にいたるまで非常に高いクオリティを持った作業マニュアルを作り上げています。
農園は標高1,850-2,100mの丘陵地にあり、敷地面積は260ha、このうち約188haにコーヒーが栽培されています。
農園には豊かな森林が広がり、多様な野生動物の住処となっています。農園は小さな区画に分けて整備されており、作業の記録や管理もしっかりと行われています。シェードツリーにはマメ科の植物を植え、施肥管理は有機肥料の投与のみを行っています。また標高が高いため病害虫の問題を無視できるのもサンチュアリオの優位な点の1つです。そして、農園の従業員や近隣の地域社会への貢献も積極的に行っています。

Popayán is a city with a European atmosphere, with many historical buildings remaining.
The walls of the houses are all white, so it is called the "white town." Although it is located on a plateau, it receives relatively heavy rainfall, with an annual rainfall exceeding 2000mm.
Popayán, Colombia, is a mountainous region with favorable conditions for coffee cultivation, such as sunshine, precipitation, altitude, and soil, making it a specialty producing region.
~ABOUT FARMER~
Santuario Farm is located on the Popayán Plateau, overlooking the Praque Volcano (4,646m above sea level) to the southeast.
Farmer owner Camilo Melisalde designed the farm from scratch and started construction in 1999 under completely sustainable conditions, aiming to revive the good old days of Colombian mild coffee.
From the beginning, Santuario Farm has aimed to produce specialty coffee, that is, "the ultimate Colombian Mild," and has created a highly high-quality work manual from sowing seedlings to harvesting and selection.
The farm is located in hilly land at an altitude of 1,850-2,100m, with a land area of 260ha, of which approximately 188ha is used for coffee cultivation.
The farm is surrounded by rich forests, which are home to a variety of wild animals. The farm is divided into small plots, and work is recorded and managed carefully. Leguminous plants are planted as shade trees, and only organic fertilizers are used for fertilization management. Another advantage of Santuario is that the high altitude means that problems with pests and diseases can be ignored. The farm also actively contributes to its employees and the surrounding local community.
