収穫期には彼らの所有する農地だけでなく、周辺の小規模な農家からチェリーが納入され、チェリーでの再選別やフローターの除去、パルピングマシンでの選別を行いウェットパーチメントになります。その後、発酵工程と水路での水洗処理を経てアフリカンベッドに運ばれます。あくまでも伝統的なプロセスに準じた方法を採用していますが、プロセスに使用する水の水質に基準を設けて、これに準ずる清潔な水を貯蔵・利用できるようにしています。また、発酵工程における時間の管理や乾燥を終える水分値や水分活性値の確認など、常に最善の方法が取れるように測定を行う事で、高品質なコーヒー生産をより安定的に行う事ができています。
　また、周囲を小高い丘に囲まれたウォッシングステーションでは冷涼な山風が吹き込んでおり、この風を利用して3週間ほどかけてナチュラルコーヒーの乾燥が行われます。アフリカンベッドは、農業用の遮光シェードを備えた日陰干し用のアフリカンベッドもあるほか、通常のアフリカンベッドにおいても日差しや気温に合わせて簾を利用しながらゆっくりと時間を掛けて乾燥させ、理想的な品質を目指しています。

During harvest season, cherries are delivered not only from their own farms but also from small-scale farmers in the area. They undergo re-sorting, floater removal, and sorting in a pulping machine to produce wet parchment. The coffee then undergoes fermentation and washing in a canal before being transported to the African Bed. While the farm adheres to traditional processes, it has established standards for the quality of the water used in the process and ensures that clean water that meets these standards is stored and available for use. By constantly monitoring the optimal method, including managing the fermentation time and checking the moisture and water activity levels at the end of drying, the farm is able to consistently produce high-quality coffee.

The washing station, surrounded by hills, is bathed in cool mountain breezes, which are used to dry the natural coffee over a period of approximately three weeks. While some African Beds are equipped with agricultural shades for shade drying, others are used in standard African Beds, where blinds are used to adjust the sunlight and temperature to allow for slow drying, achieving the ideal quality.
